Eat Cheap But Healthy: $8 Family of 4 – Meal 3

You CAN feed your family healthy, nutritious meals without spending a fortune for food.
This is day 3 of a 5 day presentation that shows you 5 different meals that you can make for your family that will cost $8 or less! Come back tomorrow to see the next meal!

1. Pineapple Pork Chops with Spicy Slaw
2. Eggplant with Garlic Beans and Rice
3. Sweet and Sour Broiled Shish Kabobs
4. Bacon Salad on Cheese Toast & Lemon Blueberry Bowls
5. Vegetable Ham in a Bowl
Sweet and Sour Broiled Shish Kabobs
Ingredients:
* 12 oz. of smoked sauce, cooked and cut into small chunks
* 1 apple, cored and cut into 1/2 inch wedges
* 1 zucchini, cut in half and cut into 1/4 chunks
* 3 T of spicy brown mustard
* 3 T honey
How to Make It:
Set the oven to broil and allow it to heat up.
Use four 12 inch shish kabob skewers and place 1 chunk of sausage on each one.
Add a wedge of apple then a chunk of zucchini to each skewer.
Continue adding ingredients in that order until you reach the bottom of the skewer.
Place the mustard into a mixing bowl.
Whisk in the honey until completely combined and smooth.
Brush each shish kabob with some of the mixture.
Place the shish kabob’s onto a broiler pan in a single layer.
Broil 4 inches from the heat source for 4 minutes.
Turn the shish kabobs and continue broiling for 3 minutes or until browned and heated through.
Serve with the remaining mustard sauce as a dip.
Serves: 4
Cost per serving: These are a wonderful addition to a budget friendly meal. They cost approximately $1.25 for each serving.
Substitute onion wedges or butter nut squash for the zucchini or pineapple chunks for the apples for the same amount of money. Barbecue sauce can also be substituted for the mustard if you prefer.
