Eat Cheap But Healthy: $8 Family of 4 – Meal 5

You CAN feed your family healthy, nutritious meals without spending a fortune for food.
This is day 5 of a 5 day presentation that shows you 5 different meals that you can make for your family that will cost $8 or less!

5. Vegetable Ham in a Bowl
Vegetable Ham in a Bowl
Ingredients:
* 2 sweet potatoes, peeled and cut into 1 inch chunks
* 1 (12 oz.) box frozen Brussels sprouts, thawed and drained
* 2 T butter
* 1 lb. ham, cooked and sliced
* 1/2 C apple butter
* 2 T cider vine vinegar
* 4 slices of Baguette
How to Make It:
Place the potatoes into a saucepan.
Add the Brussels sprouts and cover with water.
Place over medium heat and allow the water to come to a brisk boil.
Boil the vegetables 8 minutes or until they are just beginning to tender.
Drain the vegetables well.
Place the butter into a skillet over medium heat.
Allow the butter to completely melt then add the ham slices.
Cook the ham slices 5 minutes, turning a couple of times until browned evenly on both sides.
Divide the vegetables and ham slices into 4 bowls.
Place the apple butter into the skillet the ham slices were browned in.
Add the vinegar and whisk to combine.
Cook 2 minutes or until heated through.
Pour the mixture over the top of the ham and vegetables in the bowls.
Serve with the Baguette slices on the side.
Serves: 4
Cost per serving: This meal can be served at approximately $1.90 per serving. Broccoli or cauliflower can be used in place of the Brussels sprouts and should not increase the amount of each serving by more than about $.05 per serving.
